Westport Chef Kicks Off Guest Series At Fairfield Eatery With Bubby Pizza

FAIRFIELD, Conn. -- There's someone new in the kitchen at Fairfield's Brick + Wood.

As part of the restaurant's guest chef pizza series, Jes Bengtson, head chef at Westport's The Granola Bar, will unveil her “Bubby Pizza” on Wednesday, July 8 from 5 p.m. to 9:30 p.m.

This first time endeavor will include Bengtson's house-cured salmon, goat cheese, ricotta, arugula, caramelized leeks, red onion, and her own homemade caper oil. She created the caper oil by boiling olive oil, fresh dill, capers and caper juice for a distinct flavor. 

“We wanted to create a creative and delicious pizza that reflects what people love at The Granola Bar," she said. "The Bubby [a toasted half bagel with house-made chive cream cheese and house-cured salmon, tomato, red onion and capers] is a fan favorite. This pizza is a fresh and innovative spin on our signature comfort-food dish.”
